1 cup frozen mixed berries 1/2 cup coconut milk 1 tsp organic honey, opt 1 egg yolk, vanilla Blend till soft ice cream. Add more coconut milk if needed . For choc banana ice cream.- Use banana, coconut milk, honey and 2 tbls of organic cocoa powder -add nuts or chia if desired |
Butter Pecan Ice Cream
Gently ook 2 tablespoons pastured butter, ghee or coconut oil, 1 cup pecans, finely chopped
and stir until the pecans become slightly darker in color and fragrant. Remove from heat and set aside.
Heat 1 1/4 cup coconut milk, 1 1/4 cup coconut cream, 1/4 cup raw honey, 1/4 cup maple syrup, 1 tspn vanilla
Whisk 2 eggs in a separate bowl. When the milk, cream, honey, and syrup mixture starts to steam,
remove from heat and slowly pour a half-cup into the eggs while whisking.
Then slowly pour rest into the eggs while whisking vigorously.
Put into lidded container and refrigerate for 3 hours.
Put into ice cream maker for 15–20 minutes. Put pecans in during the last five minutes of churning.
(OR freeze and stir icecream every 30 mins, add pecans at last stir)
